Zucchini

I would like to share a tasty way to prepare zucchini squash.

Recipe:

Zucchini squash (qty depends on how many to feed!)
green scallions
Basil
Thyme
fresh greek oregano
olive oil (use a good one,extra virgin)
Sea Salt

Cut up zucchini into small wheels about 3/4 inch thick and place in steamer, with knife or scissors cut up green onion (1 onion for each med sized squash) thyme,oregano,and basil and place on zucchini in steamer, sprinkle with sea salt and steam for approximately 3-5 minutes until skin is bright green and mildly tender (don't overcook..yuck) take out of the steamer and sprinkle with a tablespoon of really good extra virgin olive oil (I use California olive oil ranch brand the "arbosana"...mmmm green spanish varietal..yum!)
Serve warm!
